Smoky White Bean Chili (vegan, gluten-free, low-fat)

Grilled Banana Challah French Toast (vegetarian)
Serves 1

Ingredients:

  • 1 large slice of Challah (egg) bread, broken into two
  • 1 egg, beaten
  • 2 tsp. brown sugar
  • 1 tsp. cinnamon
  • 1 medium sized banana, sliced hot dog (long) way

Directions:

  • Grease and heat griddle.
  • Make basic French toast by dredging challah in eggs and placing on griddle.
  • Sprinkle brown sugar on one side of each slice of bread.
  • Meanwhile, place the banana flat side down on griddle to cook, about 3 minutes. Flip to cook 3 minutes more.
  • When first side of toast is done cooking, flip the brown sugar side down and sprinkle cinnamon.
  • Once toast has finished cooking, remove from heat and put bananas in between slices (on the cinnamon side).
  • Gobble up the deliciousness!

Whole Wheat Pizza Dough (vegan, low-fat)

2 tsp. active dry yeast
1 tsp. sugar
1 1/4 cups warm water (105-115 degrees)
3 1/3 cups whole wheat flour
1 1/2 tsp. kosher salt
3 tsp. EVOO

Directions: Dissolve yeast into warm water and wait until foamy (3-5mins.). Put flour, salt, and 2 tsp. olive oil in food processor and set on “dough” speed. Start to add yeast water as fast as flour will absorb it and process until combined and dough cleans sides of bowl.
Coat dough with remaining olive oil and seal in plastic food storage bag. Let rise for 45 minutes in a warm place.
Voila! After that time, you’re ready to roll out the dough and get your pizza bakin’. This makes enough for 2 large pizzas.

Banana Split Soft-Serve (vegan, gluten-free, low-fat)
(Serves 1)
1 frozen banana, broken up into chunks (I promise it’s much easier to break it up before you freeze it)
3-5 whole frozen strawberries
1-2 tsp. mini semi-sweet chocolate chips

Directions: Add banana pieces into food processor one at a time (so as not to freak out the machine as I first did), alternating with frozen strawberries. Slowly add a tsp. or 2 of water until a smooth, ice-cream like consistency occurs (could take a couple minutes). Scrap sides of bowl as needed. Then add 1 tsp. of choc.chips and pulse a few more times. Top with remaining choc. chips. Done and delicious!

Semi-homemade Pita Chips (vegan, low-fat)
– Pre-heat oven to low broil
– Slice up a whole wheat roll up into 16 triangles
– Spread out on baking sheet
– Lightly spray with Pam or other cooking spray
– Broil for 2 minutes, flip and broil for 1 more minute
Devour immediately!

Tropical Soft-Serve (vegan, gluten-free, low-fat)
(Serves 1)
1 frozen banana, broken up into chunks
1/4 cup frozen pineapple chunks
Splash of orange juice (until soft-serve consistency is reached)
Add banana pieces into food processor one at a time, alternating with frozen pineapple. Slowly add a little OJ until a smooth, ice-cream like consistency occurs (could take a couple minutes). Scrap sides of bowl as needed.
Gobble up.
