Project: Food Budget, Week 10

Break it down:

Goal: $75
Actual: $48.35

I’m not quite sure why I was so under budget this week, but it probably has something to do with a recent “cook what you got” stint in the kitchen and maybe a pizza ordering session over the weekend. Hey, Hubs had friends in from the D to celebrate St. Patty’s Day…pizza was in order.

This week I made:
– Tempeh stuffed cabbage (recipe to come soon!)
– Masala baked tofu from Appetite for Reduction
– Curried cabbage and peas from Appetite for Reduction
– Coconut macaroons from Oh She Glows

It was a cooking frenzy (at least for a day or two)! I’m looking forward to making a few recipes from the Happy Herbivore cookbook this weekend. I have some beautiful kale just waiting to be steamed or sauteed…

P.S. This Sunday is Purim! Eat a hamantaschen cookie for me. I’ve already had my fill 😉
